2 large zucchinis

1 cup hummus (store-bought or homemade)

1 red bell pepper, thinly sliced

1 carrot, grated

1 cup baby spinach leaves

½ cup cherry tomatoes, halved

¼ cup feta cheese, crumbled

2 tablespoons fresh basil, chopped

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon balsamic glaze (optional)

Prepare the Zucchini: Trim the ends of the zucchinis and use a vegetable peeler or mandoline slicer to create long, thin strips (about 1/8 inch thick). Aim for 8-10 strips per zucchini. Lay the strips on a paper towel and sprinkle lightly with salt. Let them sit for about 10 minutes to release excess moisture.

    Make the Filling: In a bowl, combine the hummus, chopped basil, and a drizzle of olive oil. This will be your flavorful spread. Season with salt and pepper to taste.

      Assemble the Wraps: Pat the zucchini strips dry with paper towels. Spread a generous tablespoon of the hummus mixture along the length of each zucchini strip. Layer on slices of red bell pepper, a sprinkle of grated carrot, a few spinach leaves, and halved cherry tomatoes. Finish with a sprinkle of feta cheese.
