2 medium zucchinis

1 cup hummus (store-bought or homemade)

1 medium red bell pepper, sliced into thin strips

1 medium carrot, julienned

½ cup feta cheese, crumbled (optional)

¼ cup fresh parsley, chopped

Salt and pepper to taste

1 tablespoon olive oil

1 teaspoon lemon juice

½ teaspoon garlic powder

Pita bread or tortilla wraps (for easier rolling, optional)

Instructions
 

Prepare the Zucchini: Using a mandoline slicer or a vegetable peeler, slice the zucchinis lengthwise into thin strips. Aim for about 1/8 inch thickness. This will ensure they can be easily rolled. Sprinkle with salt and let them sit for about 10 minutes to draw excess moisture. Pat them dry with paper towels.

    Make the Hummus Mixture: In a small bowl, combine the hummus, olive oil, lemon juice, garlic powder, salt, and pepper. This adds extra flavor to the hummus. Mix well until smooth and creamy.

      Assemble the Pinwheels: Lay a zucchini strip on a flat surface. Spread a thin layer of the hummus mixture evenly across the zucchini strip (around 1-2 tablespoons).

        Add Veggies and Feta: On one edge of the zucchini strip, place a few strips of red bell pepper, a couple of carrot juliennes, a sprinkle of feta cheese (if using), and a pinch of fresh parsley.

          Roll it Up: Starting at the edge with the vegetables, carefully roll the zucchini strip tightly into a pinwheel shape. Secure it with a toothpick if necessary or place seam-side down on a plate. Repeat the process with the remaining zucchini strips and filling.

            Chill and Serve: Once all the pinwheels are assembled, place them in the refrigerator for about 15-20 minutes to firm up slightly. This will also enhance the flavors. Serve chilled as a healthy snack or appetizer, garnishing with extra parsley if desired.
