2 large zucchinis, thinly sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, thinly sliced

1 cup cherry tomatoes, halved

4 whole wheat tortillas

1 cup fresh spinach leaves

1 cup shredded mozzarella cheese (or vegan alternative)

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Vegetables: In a large bowl, combine the thinly sliced zucchinis, red and yellow bell peppers, onion, and cherry tomatoes. Drizzle with olive oil and balsamic vinegar. Add garlic powder, salt, and pepper. Toss until all vegetables are well coated.

    Grill the Vegetables: Preheat a grill or grill pan over medium-high heat. Once hot, add the vegetable mixture and grill for about 5-7 minutes, stirring occasionally, until they're tender and have nice grill marks. Remove from heat and set aside.

      Assemble the Wraps: Lay out a whole wheat tortilla on a clean surface. Place a handful of fresh spinach leaves in the center, followed by a generous portion of the grilled vegetables. Sprinkle a quarter of the shredded mozzarella cheese on top.
