Zucchini French Toast Bake

2 medium zucchinis, grated and excess moisture squeezed out

6 large eggs

1 cup milk (whole or almond)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 cup whole grain or white bread, cubed

1 cup shredded cheddar cheese (or a cheese of your choice)

½ cup maple syrup (adjust to taste)

¼ teaspoon salt

Optional toppings: chopped nuts, fresh berries, powdered sugar

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Zucchini: In a large bowl, combine the grated zucchini with a pinch of salt. Let sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean dish towel to squeeze out as much moisture as possible.

      Mix the Batter: In a separate large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, nutmeg, and salt until fully combined.

        Combine Ingredients: Add the squeezed zucchini and cubed bread to the egg mixture. Stir gently to coat the bread evenly. Fold in the shredded cheese. Mix until everything is well combined.

          Prepare the Baking Dish: Grease a 9x13 inch baking dish or lightly coat it with non-stick spray. Pour the mixture into the prepared dish, spreading it out evenly.
