1/2 cup breadcrumbs (panko or regular)

1/4 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1/4 teaspoon red chili flakes (optional, for heat)

3 tablespoons fresh parsley, chopped

2 tablespoons fresh basil, chopped

For the Herbed Yogurt Dip:

1 cup plain Greek yogurt

1 tablespoon lemon juice

1 tablespoon olive oil

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or mint)

Prepare the Zucchini: Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 15-20 minutes to drain excess moisture. Afterward, use a clean kitchen towel to wring out any remaining water.

    Mix the Ingredients: In a large mixing bowl, combine the drained zucchini, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, black pepper, paprika, red chili flakes (if using), parsley, and basil. Mix well until all ingredients are thoroughly combined.

      Form Croquettes: Take a handful of the zucchini mixture and shape it into small patties or rounded disks. Repeat until all the mixture is formed. You should get around 10-12 croquettes.

        Fry the Croquettes: In a large skillet, heat olive oil over medium heat. Once hot, carefully add the croquettes, cooking in batches if necessary to avoid overcrowding the pan. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.
