2 medium zucchinis, diced

1 cup fresh or frozen corn (thawed if frozen)

1 small red onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: feta or cotija cheese, diced tomatoes, sour cream

Instructions
 

Prepare the Zucchini and Corn: In a large skillet, heat the olive oil over medium heat. Add the red onion and sauté for about 3-4 minutes, until they become translucent. Add the minced garlic and cook for an additional 30 seconds, stirring frequently to avoid burning.

    Cook the Zucchini and Corn: Add the diced zucchini to the skillet. Sprinkle with ground cumin, chili powder, salt, and pepper. Stir well and cook for about 5-7 minutes until the zucchini is tender. Stir in the corn and cook for another 2-3 minutes until heated through.

      Warm the Tortillas: In a separate dry skillet, warm the tortillas over medium heat for about 30 seconds on each side until soft and pliable.
