2 medium zucchinis, grated

1 cup fresh corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs

1/4 cup green onions, finely sliced

1/4 cup grated Parmesan cheese (optional)

1/2 tsp baking powder

1/2 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Olive oil or vegetable oil, for frying

Fresh cilantro or parsley, for garnish (optional)

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This helps the fritters crisp up nicely.

    Mix the Base: In a large bowl, combine the drained zucchini, corn kernels, green onions, and grated Parmesan (if using).

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, cornmeal, baking powder, garlic powder, smoked paprika, salt, and pepper.

        Combine Wet Ingredients: In another bowl, beat the eggs and then pour them into the zucchini and corn mixture, mixing well to combine.
