Zesty Lemon Skewers

Ingredients
  

1 lb (450g) shrimp, peeled and deveined

2 medium zucchinis, sliced into thick rounds

1 bell pepper (any color), cut into bite-sized pieces

1 cup cherry tomatoes

2 lemons (one for juice, one for zest and wedges)

4 tbsp olive oil

3 cloves garlic, minced

1 tsp smoked paprika

1 tsp dried oregano

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Skewers (bamboo or metal, soaked in water if using bamboo)

Instructions
 

Prepare Marinade: In a mixing bowl, combine the juice of one lemon, olive oil, minced garlic, smoked paprika, dried oregano, salt, and black pepper. Whisk well to create a marinade.

    Marinate Shrimp: Add the peeled and deveined shrimp to the marinade, ensuring they are well coated. Let it marinate for at least 20 minutes to infuse flavors.

      Prep Veggies: While the shrimp is marinating, prepare the vegetables. Cut the zucchinis into thick rounds, and the bell pepper into bite-sized pieces. Set aside.

        Preheat Grill: Preheat your grill or grilling pan over medium-high heat.

          Assemble Skewers: On each skewer, thread the marinated shrimp, zucchini rounds, cherry tomatoes, and bell pepper pieces alternately. Make sure to leave a little space between each piece for even cooking.

            Grilling: Place the skewers on the grill. Grill for about 2-3 minutes on each side, or until the shrimp is opaque and the vegetables are slightly charred and tender.

              Zest & Serve: Just before serving, zest the second lemon over the skewers for an extra zing. Serve the skewers warm, garnished with fresh chopped parsley and lemon wedges on the side.
