Ingredients

6 slices of day-old brioche or challah bread, cut into 1-inch cubes

2 large apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup granulated sugar

1 tablespoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon vanilla extract

1 cup whole milk

2 large eggs

1/4 cup unsalted butter, melted

1/2 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dried cranberries (optional)

Powdered sugar for dusting (optional)

Vanilla ice cream or whipped cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or cooking spray.

Prepare the Bread: In a large mixing bowl, toss the cubed bread with the diced apples. If using, add the chopped nuts and dried fruit. Set aside.

Mix the Cinnamon Sugar: In a separate bowl, combine the granulated sugar, cinnamon, and nutmeg. Sprinkle half of this mixture over the bread and apple mixture, gently tossing to combine.

Create the Custard Mixture: In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined. Pour half of this custard mixture over the bread and apple mixture, letting it soak for a few minutes.

Combine and Layer: Pour the remaining custard over the bread mixture, ensuring all pieces are soaked. Let it sit for 5-10 minutes, allowing the bread to absorb the liquid.

Transfer to the Baking Dish: Pour the entire mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining cinnamon sugar mixture over the top.

Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the Warm Cinnamon Apple Bread Bake cool for about 10 minutes. Serve warm, dusted with powdered sugar if desired, and with a scoop of vanilla ice cream or whipped cream on the side.
