Ingredients

For the Tacos:

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

8 small corn or flour tortillas

Fresh cilantro, for garnish

Lime wedges, for serving

For the Watermelon Slaw:

2 cups watermelon, cubed and seedless

1 cup green cabbage, finely shredded

½ cup red cabbage, finely shredded

¼ cup red onion, thinly sliced

½ cup fresh mint leaves, chopped

2 tablespoons lime juice

1 tablespoon honey or agave nectar

Salt and pepper to taste

Instructions

Prepare the Watermelon Slaw:

    - In a large bowl, combine the cubed watermelon, green cabbage, red cabbage, red onion, and mint leaves.

      - In a small bowl, whisk together the lime juice, honey (or agave), and a pinch of salt and pepper.

        - Pour the dressing over the slaw mixture and toss gently to combine. Set aside to let the flavors meld.

          Cook the Turkey:

            - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.

              - Stir in the garlic and cook for an additional 1 minute, being careful not to burn it.

                - Add the ground turkey to the skillet. Break it up with a spoon and cook until browned, about 5-7 minutes.

                  - Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Stir to combine everything and cook for another 2-3 minutes until the spices are fragrant.

                    Warm the Tortillas:

                      - Heat a separate skillet over medium-high heat. Lightly toast the tortillas for about 30 seconds on each side until they are warm and pliable.

                        Assemble the Tacos:

                          - For each taco, spoon a generous amount of the turkey mixture onto a tortilla.

                            - Top with a handful of watermelon slaw and garnish with fresh cilantro. Serve with lime wedges on the side for an extra zesty kick.

                              Serve and Enjoy:

                                - Plate the tacos elegantly, serve immediately, and enjoy the refreshing contrast of the spicy turkey and sweet watermelon slaw!
