Turkey Lettuce Wraps with Watermelon Glaze

Ingredients
  

1 pound ground turkey

1 tablespoon olive oil

2 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, finely chopped

1 teaspoon ginger, grated

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1/2 teaspoon sesame oil

Salt and black pepper, to taste

1 cup diced watermelon (seedless)

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

1 head of butter lettuce (or iceberg lettuce), leaves separated

Chopped cilantro and sliced green onions for garnish

Instructions
 

Prep the Watermelon Glaze: In a blender, add the diced watermelon, honey, and rice vinegar. Blend until smooth. Pour the mixture into a saucepan over medium heat. Bring to a gentle simmer and cook for about 5 minutes, stirring occasionally.

    Thicken the Glaze: Stir in the cornstarch mixture and continue to cook for another 2-3 minutes until the glaze thickens. Remove from heat and set aside.

      Cook the Turkey Filling: In a large skillet, heat the olive oil over medium-high heat. Add the garlic and onion, sautéing until the onions become translucent (about 3 minutes).

        Add the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

          Season the Mixture: Stir in the red bell pepper, ginger, soy sauce, hoisin sauce, sesame oil, salt, and pepper. Cook for an additional 3-4 minutes until the vegetables are tender and everything is well combined.

            Combine Ingredients: Remove the skillet from heat and pour half of the watermelon glaze into the turkey mixture, stirring to combine. Reserve the other half for serving.

              Assemble the Wraps: To serve, take a lettuce leaf, spoon some of the turkey mixture into the center, and drizzle with additional watermelon glaze.

                Garnish and Enjoy: Top with chopped cilantro and sliced green onions, then roll up the lettuce to enclose the filling, and enjoy immediately!
