1 cup rolled oats

1/2 cup protein powder (vanilla or chocolate flavor)

1/2 cup unsweetened shredded coconut, toasted

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (optional for extra flavor, can use sugar-free for a healthier option)

Instructions
 

Toast the Coconut: Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet and toast in the oven for about 5-7 minutes, stirring halfway through, until it turns a golden brown. Keep an eye on it, as it can burn quickly. Once toasted, set aside to cool.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, and half of the toasted coconut (reserve the other half for coating). Stir well to combine.

      Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), vanilla extract, and sea salt until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and mix thoroughly. If you’re adding chocolate chips, fold them in at this stage.

          Form the Balls: Use your hands to scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place them on a parchment-lined baking sheet.

            Coat the Balls: Roll each ball in the remaining toasted coconut until fully coated.

              Chill: Place the protein balls in the refrigerator for at least 30 minutes to firm up.
