Sweet & Spicy Buffalo Wings

2 pounds chicken wings

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 cup hot sauce (preferably Frank's RedHot)

1/4 cup honey

2 tablespoons unsalted butter, melted

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1/2 teaspoon cayenne pepper (adjust for spice preference)

Fresh parsley or cilantro for garnish (optional)

Celery sticks and blue cheese dressing for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with aluminum foil and place a wire rack on top. This helps air circulate around the wings for a crispier texture.

    Prepare the Wings: In a large bowl, combine the chicken wings with baking powder, salt, black pepper, smoked paprika, garlic powder, and onion powder. Toss until the wings are evenly coated.

      Arrange for Baking: Spread the seasoned wings on the prepared wire rack in a single layer. Make sure they are not touching to allow even cooking.

        Bake the Wings: Bake the wings in the preheated oven for about 40-45 minutes, flipping them halfway through until they are golden brown and crispy.

          Make the Sauce: While the wings are baking, prepare the sweet and spicy buffalo sauce. In a small saucepan over medium heat, combine hot sauce, honey, melted butter, minced garlic, apple cider vinegar, and cayenne pepper. Stir until the mixture is well combined and begins to simmer, then reduce the heat and simmer for an additional 2-3 minutes. Remove from heat.

            Coat the Wings: Once the wings are baked, transfer them to a large bowl. Pour the sweet and spicy buffalo sauce over the hot wings and toss until they are thoroughly coated.
