Sweet Potato Nachos with Avocado Lime Sauce

2 large sweet potatoes, sliced into thin rounds

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (cheddar, Monterey jack, or your favorite)

½ cup diced tomatoes

¼ cup sliced jalapeños (fresh or pickled)

1 avocado

¼ cup plain Greek yogurt (or sour cream)

Juice of 1 lime

Fresh cilantro, for garnish

Instructions
 

Preheat Oven: Begin by preheating your oven to 425°F (220°C).

    Prepare Sweet Potatoes: In a large bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper until well coated.

      Bake Sweet Potatoes: Spread the sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through until they are tender and slightly crispy.

        Make Avocado Lime Sauce: While the sweet potatoes are baking, prepare the avocado lime sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, and a pinch of salt. Blend until smooth and creamy. Adjust seasoning to taste; if it's too thick, you can add a little water to reach your desired consistency.
