2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 small yellow onion, diced

2 cloves of garlic, minced

1 cup fresh spinach, chopped

3 large eggs

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish

Avocado slices (optional)

Prep the Sweet Potatoes: Begin by peeling and dicing the sweet potatoes into bite-sized cubes.
