1 cup sweet corn (fresh or frozen, thawed)

1 cup all-purpose flour (can substitute with whole wheat flour)

1/2 cup cornmeal

1 tsp baking powder

1/2 tsp salt

1/4 tsp ground cumin (optional for extra flavor)

1/2 cup warm water (add more as needed)

2 tbsp olive oil (plus more for cooking)

Fresh herbs (like cilantro or chives) for garnish (optional)

Instructions
 

Prepare the Corn Mixture: In a blender or food processor, pulse the sweet corn until roughly chopped but not pureed. You want a slightly chunky texture. If desired, reserve a few whole corn kernels for garnish.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and ground cumin. Stir until well combined.

      Incorporate Wet Ingredients: Make a well in the center of the dry mixture. Add the blended corn and the olive oil, and gradually pour in the warm water while mixing. Combine until a soft dough forms. If the dough seems too dry, add a little more water, one tablespoon at a time.

        Knead the Dough: Turn the dough out onto a lightly floured surface and knead it for about 2-3 minutes until it becomes smooth and elastic. Cover it with a towel and let it rest for about 15 minutes.

          Shape the Flatbreads: Divide the dough into 6-8 equal portions. Roll each portion into a ball, then flatten it using your hands or a rolling pin until it’s about 1/4 inch thick. If using whole corn kernels for garnish, you can press them into the surface of the flatbreads.

            Cook the Flatbreads: Heat a skillet or griddle over medium-high heat and add a little olive oil. Once the oil is hot, place one flatbread in the skillet. Cook for about 2-3 minutes, or until golden brown spots appear on the bottom. Flip and cook for another 2-3 minutes on the other side. Repeat this process for the remaining flatbreads.

              Serve Hot: Remove the flatbreads from the skillet and keep them warm in a clean kitchen towel. Serve warm with your choice of dips such as guacamole, salsa, or yogurt sauce. Garnish with fresh herbs if desired.
