8 oz (225 g) rotini pasta

4 strips of crispy bacon, chopped

1 cup fresh sweet corn (or frozen, thawed)

1 small red bell pepper, diced

½ cup red onion, finely chopped

½ cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

¾ cup mayonnaise

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

½ teaspoon garlic powder

Salt and pepper to taste

¼ teaspoon smoked paprika (optional)

½ cup crumbled feta cheese (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Bacon: In a skillet, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to absorb excess grease.

      Combine the Vegetables: In a large mixing bowl, combine the cooked pasta, crispy bacon, sweet corn, diced red bell pepper, red onion, cherry tomatoes, and chopped parsley. Toss gently to mix.

        Make the Dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, garlic powder, salt, pepper, and smoked paprika (if using) until smooth and well-combined.
