Sweet Chili Chicken and Mango Wraps

2 large chicken breasts, boneless and skinless

1/4 cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon sesame oil

1 ripe mango, sliced

1 red bell pepper, thinly sliced

1 cup shredded carrots

1 cup fresh cilantro leaves

4 large whole wheat or spinach wraps

1/2 cup sliced green onions

1 avocado, sliced

Lime wedges for serving

Salt and pepper, to taste

Instructions
 

Marinate the Chicken: In a large bowl, combine the sweet chili sauce, soy sauce, sesame oil, and a pinch of salt and pepper. Add the chicken breasts, ensuring they are coated evenly. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge for deeper flavor).

    Cook the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until cooked through and juices run clear. Let the chicken rest for 5 minutes before slicing it into thin strips.

      Prepare the Wraps: While the chicken is resting, lay out the wraps on a clean surface. Start layering with shredded carrots, sliced red bell pepper, mango slices, avocado, and fresh cilantro.

        Assemble the Wraps: Place a good handful of the sliced grilled chicken on top of the layered vegetables and fruit. Sprinkle with sliced green onions for an extra crunch.
