2 tablespoons olive oil

1 bell pepper, sliced (red, yellow, or green)

1 small red onion, thinly sliced

3 cloves garlic, minced

1 cup snap peas, trimmed

1 cup pineapple chunks (fresh or canned, drained)

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust according to spice preference)

1 teaspoon ginger, minced

1 teaspoon sesame oil

Salt and pepper to taste

Cooked rice or noodles for serving

Chopped green onions and sesame seeds for garnish

Prep the Ingredients: Start by slicing the chicken sausage, bell pepper, and onion. Mince the garlic and ginger, and prep your pineapple and snap peas.

    Heat the Oil: In a large skillet or wok, heat the olive oil over medium-high heat.

      Cook the Sausage: Add the sliced chicken sausage to the pan and sauté for about 5-7 minutes or until browned and cooked through. Remove the sausage and set aside.

        Sauté the Vegetables: In the same skillet, add the sliced onion and bell pepper. Cook for 3-4 minutes until they begin to soften. Stir in the garlic and ginger, cooking until fragrant (about 1 minute).

          Add Snap Peas and Pineapple: Toss in the snap peas and pineapple chunks. Stir-fry for another 2-3 minutes until the snap peas are tender-crisp.

            Create the Sauce: In a small bowl, mix together the soy sauce, honey, sriracha, and sesame oil. Pour this sauce over the stir-fried vegetables.

              Combine Everything: Return the chicken sausage to the skillet. Stir everything together until the sausage is heated through, and the sauce is well distributed.
