2 cups rolled oats

2 cups unsweetened almond milk (or any milk of your choice)

1/4 cup maple syrup (adjust to taste)

1/2 cup shredded coconut (sweetened or unsweetened)

1/2 cup chopped almonds

1/2 cup mini chocolate chips (dark or semi-sweet)

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp salt

1/2 tsp cinnamon

Optional: additional chopped almonds and chocolate chips for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish (roughly 8x8 inches).

    Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, salt, and cinnamon until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, and vanilla extract until well blended.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is evenly combined. Then gently fold in the shredded coconut, chopped almonds, and mini chocolate chips.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it out evenly. If desired, sprinkle additional chopped almonds and chocolate chips on top for an extra touch.

            Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the edges are slightly golden and the center is set.

              Cool and Serve: Let the baked oats cool for about 10 minutes before slicing into squares. Serve warm, optionally drizzled with additional maple syrup or a dollop of yogurt.
