Sun-Dried Tomato and Mozzarella Pasta Salad

Ingredients
  

2 cups of fusilli pasta

1 cup sun-dried tomatoes (packed in oil, drained and chopped)

1 cup fresh mozzarella balls (or diced mozzarella cheese)

1/2 cup Kalamata olives (pitted and halved)

1/2 cup baby spinach leaves

1/4 cup fresh basil leaves (torn)

1/4 cup red onion (thinly sliced)

1/3 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and black pepper to taste

Optional: Grated Parmesan cheese for serving

Instructions
 

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and black pepper until well combined. Taste and adjust seasoning if necessary.

      Combine the Ingredients: In a large mixing bowl, combine the cooked fusilli pasta, sun-dried tomatoes, fresh mozzarella, Kalamata olives, baby spinach, red onion, and fresh basil.

        Dress the Salad: Pour the dressing over the pasta salad mixture and toss gently to ensure everything is evenly coated.

          Chill and Serve: Cover the bowl with plastic wrap or a lid and refrigerate the pasta salad for at least 30 minutes or up to 2 hours to allow the flavors to meld. Before serving, give it a good toss and check the seasoning one last time. If desired, sprinkle some grated Parmesan cheese on top right before serving.
