Stuffed Bell Peppers with Ground Turkey

4 large bell peppers (any color)

1 lb ground turkey

1 cup cooked brown rice

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (canned or fresh)

1 tsp chili powder

1 tsp cumin

½ tsp paprika

½ tsp salt

¼ tsp pepper

1 cup shredded cheese (cheddar, Monterey Jack, or pepper jack)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Peppers: Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them cut-side up in a baking dish.

    Cook the Ground Turkey: In a large skillet over medium heat, add a drizzle of olive oil and the chopped onion. Sauté until the onion is translucent (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.

      Season the Turkey: Add the ground turkey to the skillet, breaking it up with a spoon. Cook until it’s browned and no longer pink. Drain any excess fat if necessary.

        Mix the Filling: Once the turkey is cooked, stir in the cooked brown rice, black beans, corn, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Allow the mixture to cook for about 5 minutes, stirring occasionally to ensure it's heated through.

          Stuff the Peppers: Carefully spoon the turkey mixture into the hollowed-out bell peppers, packing it tightly. Top each stuffed pepper with a generous amount of shredded cheese.

            Bake: Pour about 1 cup of water into the bottom of the baking dish to create steam. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro or parsley. Serve warm and enjoy your hearty and nutritious stuffed bell peppers!
