1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil (for frying)

1 red bell pepper, sliced

1 cup broccoli florets

1 cup sugar snap peas, trimmed

2 cloves garlic, minced

1-inch piece fresh ginger, grated

3 green onions, chopped (white and green parts separated)

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

2 tablespoons sesame seeds (toasted, for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes and toss them in cornstarch until evenly coated. This will help create a crispy texture when frying.

    Fry the Tofu: Heat 2 tablespoons of vegetable oil in a large non-stick skillet or wok over medium-high heat. Once hot, add the tofu cubes in a single layer without overcrowding. Fry for about 3-4 minutes per side until golden brown and crispy. Remove the cooked tofu from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a little more oil if needed. Toss in the sliced red bell pepper, broccoli florets, and sugar snap peas. Stir-fry for about 4-5 minutes until the veggies are tender but still crisp. Stir in the minced garlic, grated ginger, and the white parts of the green onions. Cook for an additional minute until fragrant.

        Make the Sauce: In a small bowl, whisk together the soy sauce, hoisin sauce, sesame oil, and rice vinegar until well combined.

          Combine Tofu and Sauce: Return the crispy tofu to the skillet with the sautéed veggies. Pour the sauce over the tofu and vegetables, gently tossing to coat everything evenly. Allow the mixture to cook for 2-3 minutes, letting the sauce thicken slightly and adhere to the tofu.
