Ingredients

2 pounds chicken wings

1/4 cup honey

1/4 cup soy sauce

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch piece fresh ginger, grated

1 teaspoon red pepper flakes (adjust for spice preference)

1 tablespoon cornstarch (optional, for glaze thickening)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken Wings:

    - Rinse the chicken wings and pat them dry with paper towels. This will help to achieve a crispy skin when baked or fried.

      Make the Marinade:

        - In a large mixing bowl, combine honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes. Whisk until smooth.

          Marinate the Wings:

            - Add the chicken wings to the bowl and toss them in the marinade until evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

              Bake the Wings:

                - Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top. This allows the heat to circulate around the wings for even cooking.

                  - Remove the wings from the marinade, allowing any excess marinade to drip off, and arrange them in a single layer on the wire rack.

                    Cook the Wings:

                      - Bake the wings in the preheated oven for about 25-30 minutes, or until they are golden brown and crispy. Flip the wings halfway through to ensure even cooking.

                        Prepare the Glaze (optional):

                          - If you prefer a thicker glaze, while the wings are baking, pour the remaining marinade into a small saucepan. If desired, mix cornstarch with a bit of cold water and add to the marinade for thickening. Bring to a simmer over medium heat, stirring continuously until it thickens. Remove from heat.

                            Baste and Crisp Up:

                              - In the last 5-10 minutes of baking, brush the wings with the glaze for added flavor, returning them to the oven for that final sticky finish.

                                Serve:

                                  - Once cooked, remove the wings from the oven and let them rest for a few minutes. Garnish with chopped green onions and sesame seeds before serving.
