Ingredients

2 large lemons (juiced, about ½ cup juice)

1 cup water

½ cup granulated sugar

1 teaspoon chili powder (adjust based on your spice preference)

¼ teaspoon salt

1 teaspoon lemon zest (for added flavor)

Fresh herbs (like mint or basil) for garnish (optional)

Instructions

Make the Syrup: In a small saucepan, combine water, sugar, chili powder, and salt. Heat over medium heat, stirring until the sugar fully dissolves. Remove from heat and let it cool for about 10 minutes.

Combine Ingredients: In a mixing bowl, combine the cooled syrup, lemon juice, and lemon zest. Stir well until all ingredients are mixed thoroughly.

Prepare the Molds: Pour the mixture into popsicle molds, leaving a little space at the top for expansion as they freeze. If using fresh herbs, drop a small piece of mint or basil into each mold for a touch of color and flavor.

Insert Sticks: Place the popsicle sticks into the molds, making sure they are centered.

Freeze: Place the filled molds in the freezer for at least 4-6 hours or until fully hard.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Carefully pull out the popsicles and enjoy!
