Spicy Mango Bars

2 ripe mangoes, peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/2 cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 teaspoon salt

Zest of 1 lime

1/4 cup shredded coconut (optional, for garnish)

Fresh mint leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch (or equivalent) baking pan and line with parchment paper for easy removal.

    Prepare the Mangoes: In a medium bowl, mash the diced mangoes with a fork or potato masher until slightly chunky. Set aside.

      Mix Dry Ingredients: In another bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, ground cinnamon, cayenne pepper, and salt until well combined.

        Combine Wet Ingredients: In a large mixing bowl, combine the melted butter, eggs, vanilla extract, and lime zest. Whisk until smooth.

          Incorporate Ingredients: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Fold in the mashed mango until evenly distributed.

            Bake the Bars: Pour the batter into the prepared baking pan, smoothing the top with a spatula. If you're using shredded coconut, sprinkle it evenly over the top.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Cut: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper and allow to cool completely on a wire rack. Once cooled, cut into squares or rectangles.

                  Garnish and Serve: Optionally, garnish with fresh mint leaves before serving. Enjoy these spicy mango bars chilled or at room temperature.
