2 cups fresh or frozen corn kernels

1 cup all-purpose flour

1 cup shredded sharp cheddar cheese

1/2 cup diced jalapeños (fresh or pickled)

1/4 cup green onions, finely chopped

1/4 cup milk

2 large eggs

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Olive oil or cooking spray (for greasing the baking dish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, garlic powder, paprika, cayenne pepper, and a generous pinch of salt and pepper. Whisk until well combined.
