Spicy Garlic Noodles with Shrimp

Ingredients
  

8 ounces of egg noodles

1 pound of large shrimp, peeled and deveined

4 tablespoons of sesame oil, divided

6 cloves of garlic, minced

2 tablespoons of ginger, minced

1-2 teaspoons of red pepper flakes (adjust to taste)

1/4 cup soy sauce

2 tablespoons of oyster sauce

2 tablespoons of rice vinegar

1 tablespoon of honey

2 green onions, thinly sliced

Fresh cilantro for garnish

Lime wedges for serving

Optional: crushed peanuts for garnish

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente, typically about 4-5 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Shrimp: In a large skillet or wok, heat 2 tablespoons of sesame oil over medium-high heat. Add the shrimp to the skillet and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining 2 tablespoons of sesame oil. Once hot, add the minced garlic and ginger. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

        Add Heat: Add the red pepper flakes to the skillet and stir for an additional 30 seconds, allowing the flavors to meld.

          Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, and honey. Pour this mixture into the skillet and bring to a simmer.

            Combine Noodles and Shrimp: Add the cooked noodles to the skillet, tossing to coat them in the sauce. Return the cooked shrimp to the skillet and toss everything together until everything is well combined and heated through, about 2-3 minutes.

              Garnish and Serve: Remove from heat, stir in the sliced green onions, and garnish with fresh cilantro. Serve the noodles hot with lime wedges on the side for a fresh squeeze of citrus, and sprinkle crushed peanuts on top if desired.
