12 large portobello mushroom caps

1 pound ground chicken

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup diced red bell pepper

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Sliced jalapeños for extra heat

Preheat and Prep: Preheat your oven to 375°F (190°C). Clean the mushroom caps and gently remove the stems, setting them aside for later. Arrange the caps on a baking sheet lined with parchment paper.

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced onion and minced garlic, sautéing until translucent.

      Add Chicken and Spices: Stir in the ground chicken, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Season with chili powder, cayenne pepper, smoked paprika, salt, and pepper.
