2 medium zucchinis, grated

1 pound ground beef (or turkey for a lighter option)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) tomato sauce

1 cup corn (fresh or frozen)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon crushed red pepper flakes (optional for heat)

1/2 cup old-fashioned oats

1/2 cup dark chocolate chips (for a unique sweet twist)

Fresh cilantro for garnish (optional)

Sour cream (optional for serving)

Prepare the Zucchini: Start by grating the zucchinis using a cheese grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture to avoid watery chili.

    Sauté the Meat: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.

      Combine Ingredients in Slow Cooker: In the slow cooker, add the cooked ground beef, grated zucchini, black beans, diced tomatoes, tomato sauce, corn, onion, and garlic.

        Season the Chili: Sprinkle in the chili powder, cumin, paprika, salt, black pepper, and crushed red pepper flakes (if used). Mix everything gently until well combined.
