Slow Cooker Turkey Veggie Chili

Ingredients
  

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 medium zucchini, diced

1 cup corn kernels (fresh or frozen)

1 can (14.5 ounces) diced tomatoes, undrained

1 can (15 ounces) kidney beans, rinsed and drained

1 can (15 ounces) black beans, rinsed and drained

2 cups vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, avocado, sour cream, cilantro, lime wedges

Instructions
 

Sauté Turkey: In a skillet over medium heat, add olive oil and sauté the diced onion and minced garlic until translucent, about 3-4 minutes. Add ground turkey and cook until browned, breaking it up with a wooden spoon. Season with salt, pepper, chili powder, cumin, and smoked paprika. Stir well to combine.

    Prepare the Slow Cooker: Transfer the turkey mixture to the slow cooker. Add chopped bell pepper, diced zucchini, corn, diced tomatoes (with their juices), kidney beans, and black beans.

      Add Broth: Pour the vegetable broth into the slow cooker, stirring to evenly distribute all the ingredients.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible. The chili is ready when the vegetables are tender and the flavors have melded together beautifully.

          Serve: Once cooked, taste and adjust seasoning if necessary. Ladle the chili into bowls and top with your choice of shredded cheese, diced avocado, sour cream, fresh cilantro, and lime wedges for an extra kick of flavor.
