4 large whole wheat tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked black beans, rinsed and drained

1 cup chopped bell peppers (any color)

1/2 cup corn kernels (frozen or fresh)

1/4 cup finely diced red onion

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper, to taste

Olive oil or cooking spray for grilling

Optional: Salsa or guacamole for serving

Prep the Veggies: In a medium bowl, combine the chopped bell peppers, corn, black beans, red onion, cumin, garlic powder, salt, and pepper. Mix until well combined.

    Assemble Quesadillas: Lay one tortilla on a clean surface. Sprinkle half of the cheddar and mozzarella cheese evenly over half of the tortilla. On top of the cheese, add a generous scoop of the veggie mixture. Finally, sprinkle the remaining cheese over the vegetables. Fold the tortilla in half to create a half-moon shape.

      Cook the Quesadillas: Heat a skillet over medium heat and lightly coat it with olive oil or cooking spray. Carefully place the folded quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and the cheese begins to melt, then flip and cook for another 3-4 minutes on the other side.

        Slice and Serve: Once both sides are golden and crispy, remove the quesadilla from the skillet and let it sit for a minute. Cut it into wedges and serve warm with salsa or guacamole on the side.
