2 cups sweet corn (fresh or frozen)

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped fresh chives

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a kick)

2 large eggs

1 cup buttermilk

1/4 cup melted butter (plus some for greasing)

1/2 cup grated sharp cheddar cheese (optional)

1/4 cup crème fraîche or sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan with butter or cooking spray.

    Prepare the Corn: If using fresh corn, cut the kernels off the cobs and set aside. If using frozen corn, thaws it slightly in a microwave or pan.

      Create the Dry Mix: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, black pepper, and cayenne pepper until well combined.

        Combine Wet Ingredients: In a separate bowl, whisk the eggs, buttermilk, and melted butter together until smooth.

          Mix Dry and Wet: Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are okay!

            Fold in the Corn and Chives: Gently fold in the sweet corn and chopped chives. If you're adding cheese, fold that in as well.

              Transfer to Loaf Pan: Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake: Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

                  Cool: Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
