Savory Sausage Breakfast Skillet

Ingredients
  

1 pound breakfast sausage (pork or turkey)

1 medium onion, diced

1 red bell pepper, diced

1 cup baby spinach, chopped

4 large eggs

2 medium potatoes, diced (or 2 cups frozen hash browns)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil or butter

1/2 cup shredded cheddar cheese (optional)

Fresh herbs (like parsley or chives), for garnish

Instructions
 

Prepare the potatoes: If using fresh potatoes, dice them into small cubes. Rinse under cold water and pat dry. If using frozen hash browns, set them aside to thaw slightly.

    Cook the sausage: In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat. When hot, add the breakfast sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Transfer to a plate and set aside.

      Sauté the vegetables: In the same skillet, add another tablespoon of oil/butter. Add the diced onions and bell peppers, sautéing for about 3-4 minutes until they start to soften. Add the diced potatoes or hash browns to the skillet. Season with garlic powder, smoked paprika, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy.

        Add spinach and sausage: Stir in the chopped spinach and return the cooked sausage to the skillet. Combine everything well and cook for another 2-3 minutes, until the spinach wilts.

          Create wells for the eggs: Using a spoon, create four small wells in the mixture. Crack an egg into each well. Sprinkle a little salt and pepper on top. Cover the skillet with a lid and cook for about 5-8 minutes, or until the egg whites are set but the yolks are still runny (or to your desired doneness).

            Cheese it up (optional): If you like, sprinkle shredded cheddar cheese on top of the skillet during the last minute of cooking to let it melt.

              Garnish and serve: Remove from heat, garnish with fresh herbs, and serve hot straight from the skillet for a hearty breakfast that’s sure to please!
