2 tablespoons olive oil

1 medium onion, diced

3 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 small carrot, diced

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/4 teaspoon nutmeg

4 cups pumpkin puree (fresh or canned)

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

Salt and pepper, to taste

Fresh cilantro, for garnish

Pumpkin seeds, for garnish (optional)

Squeeze of lime juice, for a zesty finish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until soft and translucent. Add the minced garlic and grated ginger; cook for an additional 1-2 minutes until fragrant.

    Add Vegetables and Spices: Stir in the diced carrot, ground cumin, smoked paprika, and nutmeg. Sauté for another 3-4 minutes, allowing the spices to bloom.

      Incorporate Pumpkin & Broth: Add the pumpkin puree and vegetable broth to the pot. Stir well to combine, bringing the mixture to a simmer. Reduce the heat and let it cook for about 15 minutes, allowing the flavors to meld.

        Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a traditional blender, but be cautious of the hot liquid.

          Add Creaminess: Return the blended soup to the pot (if using a traditional blender) and stir in the coconut milk. Heat gently again, making sure not to boil, then taste and season with salt and pepper as needed.

            Finish and Serve: Just before serving, stir in a squeeze of lime juice for brightness. Serve the soup hot, garnished with fresh cilantro and a sprinkle of pumpkin seeds if desired.
