4 large croissants (preferably day-old for better layering)

8 oz (225g) thinly sliced ham (preferably smoked or honey ham)

8 oz (225g) Swiss cheese, thinly sliced

4 tbsp Dijon mustard

2 tbsp unsalted butter, melted

1 tsp dried thyme (optional)

Freshly cracked black pepper, to taste

1 egg, beaten (for egg wash)

Optional: fresh spinach or arugula for added greens

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare Croissants: Slice each croissant horizontally, making sure not to cut all the way through. You want to create a pocket for the filling.

      Spread Mustard: In a small bowl, mix the Dijon mustard with a pinch of black pepper. Spread a tablespoon of the mustard mixture inside each croissant.

        Layer Ham and Cheese: Begin layering the sliced ham into each croissant, followed by a layer of Swiss cheese. If you're adding greens like spinach or arugula, layer them in as well after the cheese.
