1 cup corn (fresh or frozen)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced red onion

1/2 cup diced bell pepper (any color)

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

1 tablespoon olive oil

Salt and pepper to taste

4 large flour tortillas

Fresh cilantro, for garnish

Sour cream and salsa, for serving

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced red onion, diced bell pepper, garlic powder, cumin, paprika, and shredded cheese. Season with salt and pepper to taste. Mix thoroughly until all ingredients are well combined.

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, spoon half of the chicken and black bean mixture onto one half of a tortilla, and fold the other half over like a taco. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.

Repeat Cooking: Remove the first quesadilla from the skillet and keep it warm. Repeat the process with the remaining tortillas and filling, adding more olive oil to the skillet as needed.

Slice and Serve: Once all the quesadillas are cooked, slice them into wedges. Garnish with fresh cilantro and serve with sour cream and salsa on the side.
