2 cups cooked rice (white or brown)

1 lb boneless, skinless chicken breasts, diced

1 cup broccoli florets (fresh or frozen)

1 cup shredded carrots

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese

1 tsp dried thyme

1 tsp paprika

½ tsp black pepper

1 tbsp olive oil

1 cup breadcrumbs (preferably seasoned)

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic and sauté for about 3-4 minutes until the onion is translucent.

      Cook the Chicken: Add the diced chicken to the skillet and season with thyme, paprika, and black pepper. Cook for 5-7 minutes, stirring occasionally until the chicken is no longer pink in the center.

        Mix Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken and onions, broccoli florets, shredded carrots, cream of chicken soup, and chicken broth. Mix well until all ingredients are evenly combined.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.

            Add Cheese and Topping: Sprinkle the shredded cheddar cheese over the top of the chicken and rice mixture. Finally, add a layer of breadcrumbs for a crispy topping.

              Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.

                Garnish and Serve: Once done, remove from the oven, let it cool for 5 minutes, then garnish with fresh parsley if desired. Serve warm.
