2 cups cooked rice (white or brown)

2 cups cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, shredded chicken, frozen mixed vegetables, sautéed onion and garlic, cream of chicken soup, chicken broth, half the cheddar cheese, thyme, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

          Add Topping: If desired, sprinkle the remaining cheddar cheese on top, followed by breadcrumbs for added crunch.

            Bake the Casserole: Cover the casserole with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is bubbly and the top is golden brown.
