For the Chicken and Broth:

2 cups cooked chicken, shredded (use rotisserie for convenience)

4 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

2 carrots, sliced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and pepper, to taste

1 tablespoon olive oil

For the Dumplings:

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup milk

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Prepare the Broth: In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened.

    Add Chicken and Seasoning: Stir in the shredded chicken, chicken broth, thyme, parsley, salt, and pepper. Bring the mixture to a simmer and let it cook for about 5 minutes to blend the flavors.

      Make the Dumpling Batter: In a mixing bowl, combine the flour, baking powder, and salt. In another bowl, whisk together the milk and melted butter. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. The batter will be lumpy, and that’s okay!

        Form and Cook Dumplings: Drop spoonfuls of the dumpling batter (about a tablespoon each) onto the simmering chicken and broth mixture. Make sure to leave space between each dumpling because they will expand while cooking.

          Cover and Simmer: Once all the dumplings are added, cover the pot with a lid. Allow the dumplings to steam and cook for about 10 minutes, or until they are fluffy and cooked through. Do not lift the lid during this time!
