Savory Chicken Alfredo Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup fettuccine or any pasta, cooked al dente

1 cup Alfredo sauce (store-bought or homemade)

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup chopped fresh spinach (optional)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. You can trim the bottoms slightly if they don’t stand upright.

      Make the Filling: In a large mixing bowl, combine the shredded chicken, cooked pasta, Alfredo sauce, grated Parmesan, chopped spinach (if using), garlic powder, Italian seasoning, salt, and pepper. Mix until everything is well-coated.

        Stuff the Peppers: Generously spoon the chicken Alfredo mixture into each of the bell peppers, packing them lightly to fit all the filling.

          Arrange in Baking Dish: Place the stuffed peppers upright in a baking dish. If they are wobbly, you can place crumbled aluminum foil in the dish to stabilize them.

            Add Cheese: Sprinkle the shredded mozzarella cheese evenly over the stuffed peppers.

              Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                Broil for Finish: After 25 minutes, remove the foil and switch the oven to broil. Broil the peppers for an additional 5 minutes, or until the cheese is bubbly and lightly golden.

                  Garnish: Remove the stuffed peppers from the oven and let them cool slightly. Garnish with fresh parsley for a pop of color and freshness.

                    Serve: Serve warm as a hearty main course or alongside a light salad for a complete meal. Enjoy!
