Savory Beef and Cheddar Stuffed Potatoes

4 large russet potatoes

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

2 tablespoons chopped fresh chives (plus more for garnish)

1 tablespoon olive oil

1 cup beef broth

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Scrub the potatoes thoroughly and poke several holes in them with a fork. Place them directly on the oven rack and bake for about 45-50 minutes, or until they are tender when pierced with a fork.

      Cook the Beef Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

        Brown the Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 6-8 minutes. Drain excess fat if necessary.

          Season the Mixture: Stir in the smoked paprika, cumin, salt, and pepper. Add the beef broth and let it simmer for about 5 minutes, allowing the flavors to meld.

            Incorporate Cheese and Sour Cream: Remove the skillet from heat, then mix in the shredded cheddar cheese and sour cream until well combined. Fold in the chopped chives.

              Prepare the Potatoes: Once the potatoes are done baking, carefully cut them in half lengthwise. Scoop out some of the potato flesh to create a hollow space for the filling (reserve the scooped potato for later use in mashed potatoes or other dishes).

                Stuff the Potatoes: Generously fill each potato skin with the savory beef and cheese mixture, mounding it slightly in the center.

                  Final Baking: Place the stuffed potatoes back in the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.
