Salmon Skewers with Cherry Salsa

For the Salmon Skewers:

1 pound fresh salmon fillet, skinless and boneless

2 tablespoons olive oil

1 tablespoon lemon juice

2 garlic cloves, minced

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes prior to use)

For the Cherry Salsa:

1 cup fresh cherries, pitted and chopped

½ small red onion, finely chopped

1 jalapeño, seeded and minced

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 tablespoon honey

Salt and pepper to taste

Instructions
 

Prepare the Salmon:

    - Cut the salmon fillet into 1-inch cubes and place them in a large mixing bowl.

      - In a separate bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, salt, black pepper, and dill.

        - Pour the marinade over the salmon pieces and toss gently to coat thoroughly. Cover and let marinate in the refrigerator for at least 30 minutes.

          Make the Cherry Salsa:

            - In a medium bowl, combine the chopped cherries, red onion, jalapeño, and cilantro.

              - In a small bowl, whisk together the lime juice, honey, and a pinch of salt and pepper.

                - Pour the dressing over the cherry mixture and stir to combine. Set aside to let the flavors meld.

                  Assemble the Skewers:

                    - Preheat the grill to medium-high heat. If using metal skewers, make sure they are clean and ready to use.

                      - Thread the marinated salmon cubes onto the skewers, leaving a little space between each piece to ensure even cooking.

                        Grill the Skewers:

                          - Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the salmon is opaque and flakes easily with a fork.

                            Serve:

                              - Remove the skewers from the grill and let them rest for a few minutes. Serve warm with the cherry salsa drizzled on top or on the side for dipping.
