Roasted Red Pepper Chickpea Burgers

Ingredients
  

1 can (15 oz) chickpeas, rinsed and drained

1 cup roasted red peppers, jarred or homemade

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped red onion

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1 tablespoon tahini

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil for frying

Burger buns, lettuce, and your favorite toppings (avocado, tomato, and sauce)

Instructions
 

Prepare the Chickpeas: In a large bowl, mash the rinsed and drained chickpeas using a fork or a potato masher. Leave some texture for a hearty bite.

    Mix the Veggies: Add the roasted red peppers, finely chopped red onion, minced garlic, and chopped parsley to the mashed chickpeas. Stir until everything is well combined.

      Season the Mixture: Stir in the breadcrumbs, tahini, ground cumin, smoked paprika, salt, and pepper. Mix until the ingredients are evenly incorporated. If the mixture feels too wet, add more breadcrumbs until it binds well.

        Form the Patties: Divide the mixture into 4 equal portions and shape each portion into a burger patty, roughly 1/2 inch thick.

          Chill the Patties: Place the patties on a parchment-lined plate or tray and refrigerate them for at least 30 minutes. This will help them hold their shape during cooking.

            Cook the Burgers: Heat olive oil in a skillet over medium heat. Carefully add the chilled patties to the skillet (cook in batches if necessary) and fry for 4-5 minutes on each side, or until golden brown and slightly crispy.

              Assemble the Burgers: Toast your burger buns lightly on the skillet if desired. Layer the burger patties with lettuce and any preferred toppings such as avocado slices, sliced tomato, and your favorite sauce or condiment.
