Ingredients

2 cups broccoli florets

2 cups cauliflower florets

3 tablespoons olive oil

Salt and pepper, to taste

8 ounces elbow macaroni (or your choice of pasta)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

Roast the Vegetables: In a large bowl, toss the broccoli and cauliflower florets with olive oil, salt, and pepper. Arrange them in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes until tender and slightly charred, stirring halfway through to ensure even cooking.

Cook the Pasta: While the vegetables roast, bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Sauce: In a large saucepan over medium heat, combine the milk and heavy cream. Gradually whisk in the garlic powder, onion powder, mustard powder, and smoked paprika. Once combined, add the cheddar and mozzarella cheeses, stirring until melted and smooth. Season with salt and pepper to taste.

Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta, roasted broccoli, and cauliflower. Pour the cheese sauce over the pasta and vegetables, mixing until everything is well-coated.

Transfer to Baking Dish: Pour the mac and cheese mixture into a greased 9x13 inch baking dish. If using, sprinkle breadcrumbs evenly over the top for added texture.

Bake: Return the dish to the oven and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, then garnish with freshly chopped parsley before serving.

Enjoy your Cheesy Broccoli & Cauliflower Bake—comfort food at its finest!
