1 tbsp sesame oil (or any cooking oil)

2 green onions, chopped

2 cloves garlic, minced

1/2 tsp ginger, grated (optional)

Salt and pepper to taste

Prepare the Eggs: In a medium bowl, whisk the eggs with a pinch of salt and pepper. Heat a large non-stick skillet or wok over medium heat and add a small amount of oil. Pour in the eggs and scramble until just set. Remove from the pan and set aside.
