Ingredients

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 cup teriyaki sauce (store-bought or homemade)

2 cups cooked white rice or brown rice

1 cup broccoli florets (fresh or frozen)

1 carrot, peeled and sliced into thin rounds

1/2 cup snap peas, trimmed

2 tablespoons sesame oil (or any cooking oil)

1 tablespoon honey (optional for extra sweetness)

1 teaspoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Instructions

Marinate the Chicken: In a bowl, mix the chicken pieces with 1/2 cup of the teriyaki sauce. Allow it to marinate for at least 10 minutes while you prepare other ingredients.

Cook the Vegetables: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Add the broccoli, carrot rounds, and snap peas. Stir-fry for about 5–7 minutes until the vegetables are tender-crisp. Remove from the skillet and set aside.

Cook the Chicken: In the same skillet, add another tablespoon of sesame oil. Pour in the marinated chicken and any remaining marinade. Cook for about 7–10 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized. If desired, add honey for extra sweetness during the last minute of cooking.

Combine and Simmer: Add the cooked vegetables back into the skillet with the chicken. Pour in the remaining teriyaki sauce and stir gently to combine. Let it heat through for about 2-3 minutes, stirring occasionally.

Assemble the Bowls: Divide the cooked rice among serving bowls. Top with the teriyaki chicken and vegetable mixture.

Garnish and Serve: Sprinkle with sesame seeds and sliced green onions for an extra touch. Serve warm and enjoy!
