1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Cook the Quinoa: In a medium saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to a simmer, cover, and cook for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let it cool to room temperature.

    Prepare the Vegetables: While the quinoa is cooling, chop the cherry tomatoes, cucumber, bell pepper, and red onion. Set aside.

      Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.

        Combine Ingredients: In a large bowl, combine the cooled quinoa, chopped vegetables, olives, feta cheese, parsley, and mint. Drizzle the dressing over the salad and toss gently to combine.

          Serve and Enjoy: This salad can be served immediately, but it’s even better if allowed to sit for 30 minutes in the refrigerator to let the flavors meld together. Garnish with additional herbs or feta, if desired.
