Ingredients

1 lb ground beef

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning (store-bought or homemade)

1/2 teaspoon salt

1/4 teaspoon black pepper

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream (optional, for serving)

Fresh Avocado Salsa:

1 ripe avocado, diced

1 small jalapeño, seeded and minced

1/4 cup red onion, finely chopped

1 lime, juiced

Salt and pepper to taste

1 tablespoon chopped fresh cilantro (optional)

Instructions

Prepare the Avocado Salsa: In a medium bowl, combine the diced avocado, minced jalapeño, chopped red onion, and lime juice. Stir gently to combine, and season with salt and pepper to taste. If desired, mix in the chopped cilantro. Set aside.

Cook the Beef Mixture: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes). Add the ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes.

Season the Beef: Once the beef is fully cooked, drain any excess fat if needed. Sprinkle the taco seasoning, salt, and black pepper over the beef. Stir to coat evenly and cook for an additional 2-3 minutes, allowing the flavors to meld.

Warm the Tortillas: In a separate skillet or on a grill, warm each tortilla for 30 seconds on each side, or until they are pliable and lightly toasted. This enhances flavor and prevents tearing.

Assemble the Tacos: Take a warm tortilla and add a portion of the beef mixture. Top with shredded lettuce, diced tomatoes, and a sprinkle of shredded cheese. Finish with a dollop of avocado salsa on top.

Serve: If desired, serve with a side of sour cream for extra creaminess. Enjoy your delicious Quick Beef Tacos with Fresh Avocado Salsa!
