1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper, sliced (red or yellow for color)

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sugar

Salt and pepper to taste

Cooked white or brown rice, for serving

Sesame seeds and green onions, for garnish

Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, rice vinegar, sugar, and a dash of sesame oil. Set aside.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Once hot, add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until browned and cooked to medium-rare. Remove the beef from the pan and set aside.

        Cook the Vegetables: In the same pan, add a splash more oil if needed, then toss in the minced garlic, grated ginger, and sliced bell pepper. Stir-fry for 1-2 minutes until fragrant, followed by the broccoli florets. Cook for an additional 3-4 minutes until broccoli is vibrant and slightly tender but still crisp.

          Combine Ingredients: Return the beef to the pan along with the prepared sauce. Toss everything together and cook for another 2 minutes, ensuring the beef and vegetables are evenly coated and heated through.
